Spelt is an ancient grain that is native to Iran and some parts of Europe. It is low in gluten but rich in vitamins and minerals like magnesium, calcium, selenium, iron, manganese, zinc, and vitamins E and B-complex. It is a good source of protein but is low in calories.

It has a slightly sweet and nutty flavour similar to that of whole wheat but none of the bitterness. It is a light grain so it doesn’t weigh down pastries like whole wheat can. Plus, pastries baked with spelt usually are more soft and tender.
